quinoa patty with poached egg

I’ve been getting my money’s worth out of the silicone egg poaching cups I recently purchased.  Plus this recipe helps me detox from the peanut butter caramel corn.

Quinoa Patty with Poached Eggs

  • 2 cups cooked quinoa, at room temperature
  • 2 eggs, beaten
  • 1/2 tsp. salt
  • 1/4 cup minced green onions (green part)
  • 1/4 cup minced onion
  • 2 cloves garlic, minced
  • 1/3 cup grated Parmesan cheese
  • 1/2 cup whole grain bread crumbs
  • Misto filled with olive oil
  • 6 poached eggs
  • salt and pepper

Combine the quinoa, beaten eggs, salt, green onions, onions, Parmesan, and garlic.  Mix in the bread crumbs and form the mixture into six patties.

Spray a pan with a Misto filled with olive oil and heat to medium.  Place patties in the pan and cook 4 minutes or until lightly browned.  Carefully flip the patties and brown the second side.  Top each patty with a poached egg, a sprinkle of Parmesan if desired, salt, and pepper.  Makes 6 servings.

    Hi Kelly!!! Where can you buy quinoa? This looks really good!

      You can find it at all the local stores, usually in the rice aisle. Tacoma Boys has red, white, and black varieties. Costco sells a big bag of it 🙂

    I made this for dinner this evening and it was yummy! Even some of the skeptics were won over.
