I had several ripe bananas on my counter and a large bag (is there really any other size at Costco?) of fresh cranberries, so I decided to whip up a quick batch of banana bread. This recipe from Weightwatchers.com seemed like the perfect combination of ingredients, and I like how the addition of cranberries makes the typical banana bread seasonal. I recently purchased Fiori di Sicilia from kingarthurflour.com and decided to try it in this recipe, even though it didn’t call for vanilla extract. It is an orange and vanilla flavoring that is out of this world! I added 4 drops to the batter and it really enhanced the flavor of the bread (it’s my new secret ingredient!)
I was out of vegetable oil, so I used 3 tablespoons of melted butter, which actually has 1 PointsPlus less than the oil. I sliced the finished loaf into 12 slices and froze each one in its own ziplock bag. A pre-portioned 3 PointsPlus snack!
Update: I was down 3.2 lbs today at Weight Watchers! It works if you do it!
Cranberry Banana Bread
1 3/4 cup white whole wheat flour
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. salt
3/4 cup sugar
3 Tbsp. melted unsalted butter
1/2 cup fat-free egg substitute
3 ripe bananas, mashed
1/2 cup chopped fresh cranberries
- 4 drops Fiori di Sicilia (optional)
Preheat oven to 350 degrees F. Spray a 9 x 5 bread pan with non-stick spray.
In a small bowl, combine flour, baking soda, cinnamon, and salt. Set aside.
In a mixing bowl, combine melted butter and sugar. Mix until sugar begins to dissolve, about 2 minutes. Scrape down sides of mixer with spatula. Add egg substitute, bananas, and Fiori di Sicilia (if using). Combine well.
Add dry ingredients and cranberries to bowl. Stir to combine.
Pour batter into prepared pan, smooth top with spatula. Bake until brown and toothpick inserted into center has a few moist crumbs on it (about 45 minutes). Place pan on wire rack and let cool for 10 minutes. Turn out bread onto rack and cool completely.
