pumpkin spice latte cupcakes

After the pasta dinner we celebrated with cupcakes!  This flavor was a hit with the teenagers (and parents alike), even though I forgot to brush the tops with coffee.  Subtle coffee and pumpkin spice flavored cake topped with a whipped cream frosting and caramel drizzle that truly takes it over the top.  They are on the second tier.

Pumpkin Spice Latte Cupcakes

Cupcakes:

  • 2 2/3 cups all-purpose flour
  • 3 Tbsp. espresso powder
  • 2 tsp. baking soda
  • 2 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/8 tsp. nutmeg
  • 1/8 tsp. ground cloves
  • 1 tsp. salt
  • 1 (15 oz.) can pumpkin puree
  • 1 cup sugar
  • 1 cup brown sugar
  • 3/4 cup vegetable oil
  • 4 large eggs
  • 1/2 cup coffee or espresso, for brushing

Whipped Cream:

  • 2 cups heavy cream, chilled
  • 1/4 cup confectioners’ sugar

Garnish:

  • ground cinnamon
  • caramel sauce

Preheat the oven to 350 degrees F.  Line cupcake pans with liners.

In a medium bowl, combine flour, espresso powder, baking soda, baking powder, cinnamon, nutmeg, cloves and salt.  Set aside.

In the bowl of an electric mixer, blend together the pumpkin, granulated sugar, brown sugar and oil.  Add the eggs one at a time, beating well after each egg.  With the mixer on low speed, add the flour mixture, mixing just until incorporated.

Fill the cupcake liners 3/4 way full.  Bake until golden and a toothpick inserted into the center comes out clean, about 18-20 minutes.  Let cool 10 minutes, then remove from pan.  While the cupcakes are still warm, brush them with the coffee or espresso.  Let cool completely.

To make frosting, place whipping cream in mixer bowl.  Using a whisk attachment, whip on medium-low speed until slightly thickened.  Blend in confectioners’ sugar, then increase speed to high.  Whip until stiff peaks form, being careful not to over-beat.  Using a pastry bag with a large star tip, frost the cooled cupcakes.  Sprinkle with cinnamon and drizzle with caramel.
