oat-topped peach crisp

I love hot fruit desserts!  I would go as far as to say I prefer them over chocolate desserts.  It’s a great way to satisfy your after-dinner sweet tooth, add a serving of fruits and get a little fiber while you’re at it.

Oat-topped Peach Crisp

  • 4 medium peaches, sliced
  • 2 1/2 Tbsp. sugar
  • 1 Tbsp. flour
  • 1/2 cups whole wheat bread crumbs
  • 3 Tbsp. brown sugar
  • 1/2 cup old-fashioned oats
  • 1/4 tsp cinnamon
  • 1 Tbsp. butter substitute, like Brummel and Brown

Preheat oven to 350 F degrees.  Combine peaches, sugar and flour in a bowl.  Pour into glass pie dish.  Combine bread crumbs, brown sugar, oats and cinnamon in a small bowl.  Sprinkle over peaches and then dot with butter substitute.  Bake until peaches are bubbling and topping has browned, about 40 minutes.

    I needed to use some peaches I bought that weren’t very flavorful, but they were expensive, so I didn’t want to throw them away. They turned out really good in this and my kids loved it also. Couldn’t even tell it was half whole wheat bread. Another winner!
