ginger steak salad

We just got back from camping in the Olympic National Forest.  After three days of eating canned and dehydrated foods, I was craving steak and my husband was craving fresh produce.  This recipe fit the bill and made us both very happy!

The dressing is delicious!  A little sweetness from the sugar, tang from the lime juice, spice from the jalapeno.  Add more or less jalapeno to suit your taste.  I keep my ginger root in the freezer.  It can last for months without spoiling and it is easy to grate with a microplane zester/grater.

Ginger Steak Salad

Marinade Ingredients:

  • 2 Tbsp. soy sauce
  • 1 Tbsp. sherry
  • 2 cloves garlic, minced
  • 2 tsp. brown sugar
  • 1 rib-eye or sirloin steak

For Salad Dressing:

  • 2 Tbsp. olive oil
  • 2 Tbsp. soy sauce
  • 2 Tbsp. white sugar
  • 1 Tbsp. lime juice
  • 2 cloves garlic, finely diced
  • 1 Tbsp. fresh ginger, finely minced
  • 1/4 jalapeno, seeded and diced

Salad Ingredients:

  • 2 green onions, sliced
  • cherry tomatoes, halved
  • salad greens
  • yellow pepper, diced
  • avocado, diced

Combine marinade ingredients in a ziploc bag.  Place whole steak into bag and marinate for 30 minutes to 2 hours.

Combine salad dressing ingredients and set aside.

Cook steak on a skillet over high heat or on the bbq until done to your liking.  Allow to rest for 10 minutes.  Slice thinly.

Toss salad greens with 3/4 dressing.  Place greens on a plate and top with tomatoes, yellow pepper and avocado.  Place steak slices on top.  Sprinkle with green onions and pour remaining dressing over top.

Using the Weight Watchers Recipe Builder, the entire dressing recipe has 11 pts+.  3 ounces of sirloin steak has 4 pts+ and 3 ounces of rib-eye has 5 pts+.  1/4 of an avocado has 2 pts+.
