This is a great hot breakfast that uses staples that you probably have on hand at all times. And it was all ready to go into the oven before it finished preheating. Love that!
Apple Oven Pancake
- 3 Tbsp. butter
- 1/4 cup packed brown sugar
- 1/4 tsp. cinnamon
- 1 large sweet apple, peeled and sliced
- 3 eggs
- 1/4 tsp. salt
- 1/2 cup flour
- 1/2 cup nonfat milk
Preheat oven to 425 F degrees.
Melt butter in an oven-proof skillet over medium-high heat. Stir in brown sugar and cinnamon. Add apple and cook until just softened.
In a blender, combine milk, flour, eggs and salt. Pour mixture over apples and bake until puffed and brown, about 13-15 minutes. Sprinkle with lemon juice and powdered sugar.
