This recipe comes from Weight Watchers.  It’s a nice dish when you want to use fresh corn, but don’t want to eat with your hands.  Plus it has that smoky bacon taste.  Yes, you can enjoy bacon on Weight Watchers!  I just get a slice from the meat department instead of buying a whole package.

Delicious!

Corn Saute

  • 1 thick-slice of bacon
  • 1/2 cup chopped onion
  • 1/4 cup finely chopped red bell pepper
  • 2 cups fresh corn kernels (I used 4 ears)
  • 1/2 tsp. dried thyme
  • 1/4 tsp. salt
  • 1/4 tsp. fresh ground pepper

Cook bacon in a large non-stick skillet over medium heat until crisp.  Remove from pan and crumble.  Set aside.

Add onion and red pepper to pan.  Saute 5 minutes.  Add corn, thyme, salt and pepper.  Saute 4 minutes or until corn is tender.  Stir in crumbled bacon.

3 WWpts+ per 1/2 cup serving.

    Made this tonight and YUM! While I used bacon, did you know that a pinch of smoked paprika can add a bit of smoked bacon-y flavor? Let me know if you want to try some, I’ll drop it by your house.
