This would be a fantastic salad on a hot summer day. Cool and crisp jicama, peppery crisp radish and luscious mango pieces. I sprinkled some Pico Limon on top to give it a little spicy kick because I needed a little heat in my life today, and I’m just not getting it from the sun!
Jicama, Radish and Mango Salad
- 1 medium jicama, cut into match sticks
- 6 radishes, cut in half and sliced thin
- 1 mango, diced
- 2 Tbsp. lime juice
- 1 tsp. Dijon mustard
- 1 Tbsp. olive oil
- pinch of salt and pepper
- 1 Tbsp. finely chopped onion
- optional: lettuce leaves
In a large bowl, combine jicama, radish and mango pieces. Combine lime juice, mustard, olive oil, salt and pepper and mix well. Pour over salad and toss gently. Serve over lettuce leaves if desired.
