This yogurt garlic dip is great served along with the orange-glazed salmon. My husband and kids raved about it! My 10-year-old son gave it “5 stars”. It would also be delicious with chicken skewers.
Yogurt Garlic Dip
- 1 small cucumber, peeled, seeded and grated
- 1 tsp. sea salt
- 1 cup plain non-fat Greek yogurt
- 1 clove garlic, minced
- 2 tsp. lemon juice
- 2 Tbsp. chopped parsley
Place grated cucumber in a small bowl with salt. Let sit 30 minutes. Squeeze cucumber to remove excess water. Add yogurt, garlic, lemon juice and parsley.
Serve with salmon kebobs.
