grilled salmon salad

Today I decided that maybe if I acted like it was Spring, then maybe it would come true.  This is a delicious salad from Sunset Magazine.  I’ve had it in my recipe book for over 10 years and usually make it in the spring/summer when the Copper River Salmon is available.  So here’s hoping my mojo will work and we’ll be getting the sunscreen out soon!

Grilled Salmon Salad

Salmon:

  • 1 1/2 lb. salmon fillet
  • 3 Tbsp. brown sugar
  • 1 Tbsp. cumin
  • 1 tsp. chili powder
  • 1 tsp. salt
  • 1 tsp. pepper

Vinaigrette:

  • 1 cup diced tomatoes
  • 1/4 cup red wine vinegar
  • 1 Tbsp. olive oil
  • 1 Tbsp. minced onion
  • 1/2 tsp. dry mustard
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • lettuce
  • goat cheese
  • 1/4 cup minced green onions
  • 1/4 cup pine nuts, lightly toasted

Combine brown sugar, cumin, chili powder, salt and pepper and rub onto salmon.  Chill 30 minutes to 4 hours.  BBQ or broil salmon until it reaches 140 degrees.

Combine vinaigrette ingredients.  Divide lettuce into bowls.  Top with salmon, drizzle with vinaigrette.  Sprinkle top with goat cheese, green onions and pine nuts.

I made my salad with 4 oz of salmon (6 pts+), 1.5 oz of goat cheese (3 pts+) , 1 Tbsp. of pine nuts (1 pts+).  I estimated 1 pts+ for the olive oil in the vinaigrette and brown sugar in the rub, for a total of 11 WWpts+.  If you are counting points, just measure what you use and calculate using the tools from Weight Watchers.
