I love my Weight Watcher meetings!  Even though I reached my goal weight nine months ago, I still attend every week.  Weekly weigh-ins keep me accountable for the food and activity choices I have made, plus the support from your fellow members in invaluable.  My Weight Watchers leader, Allison, is amazing.  She is positive, supportive and your biggest cheerleader.  She has created a great supportive atmosphere where everyone feels like they can contribute their ideas to help others be successful.

This recipe is from Thecla, one of our new “Lifetime” members.  She shared this recipe a while ago with the group and it sounded fantastic.  And I wasn’t disappointed!  The original recipe is below.  I had an orange pepper and sliced carrots left over from a different recipe and decided to throw them in as well.  Delicious!

Chicken Thecla

  • 8 oz. chicken breast, cubed
  • 1/2 sliced onion
  • 1 strip jalapeno, minced (optional)
  • 2 cloves garlic, minced
  • 1 slice fresh ginger, minced
  • 1 diced tomato
  • 3 oz. Fage 0% plain Greek yogurt
  • 1/4 tsp. turmeric
  • pinch salt
  • cilantro for garnish
Spray a non-stick pan with non-stick spray 🙂  Over medium heat, saute onion, ginger, garlic, jalapeno until onion is slightly translucent.  Add tomatoes and cook for another 1-2 minutes.  Add yogurt and stir.  Add chicken pieces, turmeric and salt.  Cover and simmer until chicken is cooked through, about 6-8 minutes, stirring occasionally.  Garnish with cilantro.
Serves: 2
Using the Weight Watchers Recipe Builder for the original recipe, it is 4 pts+ per serving.  Adding the carrots and bell pepper adds another point per serving.  I served this with 3/4 cup of brown basmati rice, which is another 4 pts+.
