turkey enchiladas

Another quick, easy and homemade dinner…you could make it even quicker if you used canned enchilada sauce, but frankly, you can make it from scratch in the time it takes to make the filling.  I had a spare half hour this morning, so I threw it together and put it in the refrigerator until this evening when I popped it into the oven.

You can also use La Tortilla Factory’s Smart and Delicious Soft Wraps instead of the Mission Carb Balance for the same total points+ per serving.  I served it with a side of lettuce, tomato and sliced jicama.

Turkey Enchiladas

  • 1 lb. ground turkey breast
  • 1 can (15.5 oz) black beans, rinsed and drained
  • 1 can (4.5 oz) chopped green chiles
  • 1 can (14.5 oz) diced tomatoes
  • 2 cloves garlic, minced
  • 1/2 onion, chopped
  • 1/4 cup chopped cilantro
  • 1 tsp. cumin
  • 1 tsp. chili powder
  • 8 Mission Carb Balance Flour Tortillas, medium
  • 1 cup Lucerne 2% Milk Mexican Four Cheese Blend, shredded
  • non-stick spray

Enchilada Sauce

  • 2 garlic cloves, minced
  • 1 tsp. chipotle chiles in adobo sauce
  • 1 1/2 cups tomato sauce
  • 1/2 tsp. chili powder
  • 1/2 tsp. ground cumin
  • 3/4 cup vegetable or chicken broth

To make the sauce, coat bottom of saucepan with non-stick spray.  Saute garlic  Then add chiles, tomato sauce, chili powder, cumin and broth.  Bring to boil.  Reduce heat to low and simmer 10 minutes.

In a large non-stick skillet, brown ground turkey.  Add chopped onion, garlic, cumin, chili powder, beans, tomatoes, cilantro, green chiles.  Stir and simmer on low for 20 minutes.

Preheat oven to 400 degrees. Spray a 9×13 pan with non-stick spray.  Place 1/2 cup of the turkey mixture into the center of each tortilla and roll it up.  Place in baking dish, seam side down.  Top enchiladas with sauce and sprinkle cheese evenly over pan.  Cover with foil and bake for 25 minutes.  Remove foil and continue baking until lightly brown.

Using the Weight Watcher’s Recipe Builder, I calculate each enchilada to be 7pts+, based on using ground turkey breast (99% fat-free), Lucerne 2% Milk Mexican cheese blend and Mission Carb Balance Flour Tortillas, medium size.

    What a great dinner for my picky family!!! Everyone liked this dish. I made some with beans and some without. It worked great and was delicious!!!

    Made this for dinner tonight. Oh my, I feel like I’m down in Mexico sitting by the sea eating a wonderful enchilada.
