cinnamon coffee cake

This recipe is from Marc’s Grandpa George. He and his siblings enjoyed it growing up.  It was the breakfast speciality of his brother Eric.

Cinnamon Coffee Cake

  • 1/2 cup sugar
  • 1/3 cup butter, softened
  • 1 tsp. cinnamon
  • 1/2 cup milk
  • 1 egg
  • 2 cups flour
  • 1 Tbsp. baking powder
  • 1 tsp. salt

Preheat oven to 400 degrees and spray a 9″ pan with non-stick spray.

Combine sugar, butter and cinnamon in a mixer.  Add milk, then egg.  Batter will not be smooth!  It will have clumpy butter parts and liquid parts.  Don’t worry!  Mix in flour, baking powder and salt.  Spread batter into pan.

Topping:

  • 2 Tbsp. flour
  • 2 Tbsp. butter, cold
  • 5 Tbsp. sugar
  • 3/4 tsp. cinnamon

Cut butter into dry ingredients (I use a mini Cuisinart chopper).  Sprinkle topping evenly over batter.  Bake for 25-30 minutes or until toothpick comes out clean.

    so good! my grandpa would be proud. sort of. he’s not one to get real excited or to offer praise, but I think he would have noticed this. but just a small piece because of the diabetes.
