blackberry cream cheese muffins

I really am obsessed with recipes.  I love to read cookbooks for fun.  And I love getting up in the morning, clicking through my favorite bookmarked food blogs and deciding “I have to make that right now!”.  These blackberry cream cheese muffins from Baking Bites caught my eye this morning.  I used frozen blackberries, since that is what I had on hand.  Recipe makes 12 muffins, at 6 WW pt+ a piece (using regular cream cheese, butter and skim milk).

One of my games I like to play is to see if I can put together a recipe and clean up the mess before the oven preheat signal goes off.  It reaffirms to me that you CAN have homemade food quickly.  This recipe proves my theory!

    I just ate five of these after a long run this morning – I’d eat more if I didn’t think the kids would be upset. Great berry flavor. I don’t normally like cream cheese in baking, but it was subtle in this recipe. Just perfect.
