This is my new favorite way to roast potatoes! They are creamy on the inside and crispy on the outside. Yum!
Smashed Roasted Potatoes
- new potatoes, scrubbed
- olive oil non-stick spray
- salt and pepper
Bring a large pot of salted water to a boil and carefully add potatoes. Cook until tender. Drain water.
Preheat oven to 400 degrees. Spray olive oil non-stick spray on baking sheet. Using the bottom of a mug or ramekin, slightly press down on potatoes, splitting skin. Press just until they split, don’t over squish. Spray potatoes with non-stick spray, season with salt and pepper and roast for 40-45 minutes, or until golden brown and the skins are crisp.
WW pts+ for cooked new potatoes: 4 pts+ for 6 oz of potatoes. 3 pts+ for 5 oz. This recipe can be made with olive oil instead of non-stick spray, but of course the points would be higher!

These are so easy to make and taste better than mashed potatoes. Everyone loved this when I served them.
