This chili is amazing. It is basically a pantry meal…open six cans, brown ground turkey and onion, dump in some chili powder and you’re done with your work. The crock pot does the rest. My boys love it with baked tortilla scoops. I like to top it off with cilantro, purple or green onion and a spoonful of Fage 0% plain Greek yogurt. Another winner from skinnytaste.com. 5 WW pts+ for 10.8 oz (1 cup=8oz).
For my vegetarian, I just put all the beans, tomatoes and chili powder in the crock pot, stirred it up and took out a serving size for her. Then I added the meat. I’ll just heat hers up on the stove for about 15 minutes on low.
Don’t like ground turkey? You could use ground beef, 1 lb. of 93/7% gives the same total points+ per serving.
- 1 package (20 ounces) fat free ground turkey breast
- 1 onion, chopped
- 1 (28 oz) can diced tomatoes
- 1 (16 oz) can tomato sauce
- 1 (4.5 oz) can chopped chilies
- 1 (15 oz) can garbanzo (chickpeas), undrained
- 1 (15 oz) can black beans, undrained
- 1 (15 oz) can pinto beans, undrained
- 2 Tbsp. chili powder
Brown ground turkey and onion in a nonstick skillet over medium high heat. Drain any fat and place in crock pot. Add remaining ingredients and mix well. Cook on high 6-8 hours or on low for 10-12 hours.
Serve with a variety of toppings: baked tortilla chips, shredded cheese, diced purple or green onion, cilantro, fat free Greek yogurt, squeeze of lime wedge
